Schwarz Wine Company The Schiller Shiraz draws vines planted by Carl August Otto Schiller in 1881 and given a last minute reprieve from bulldozers by Jason Schwarz in 2006.
Destemmed grapes to open fermented with wild yeasts, receiving soft pump overs and hand plunging daily.
Midway through the ferment, a new French oak hogshead is filled and this portion of the juice completes fermentation in barrel. The rest remains in tank, spending extended time on skins.
The free run juice is drained to seasoned French oak and the skins are basket pressed to new French oak. After maturation and blending the wine is bottled unfined and unfiltered.
Impenetrably dark, Schwarz Wine Company The Schiller Shiraz is soft and unctuous with an array of dark fruit flavours and fruit cake spices. Cellaring potential is 10 years.
